Ingredients: Olive oil Zucchini Yellow squash Calabacita squash (or another zucchini). Shallots Cauliflower rice Black beans Sweet corn Garlic Salt & pepper
Preheat oven to 400°F and place an oven-safe skillet on the stovetop. Sauté diced squash for 8-10 minutes, then add diced shallots and cook 2 minutes longer.
Add cauliflower rice, black beans, sweet corn, half of your shredded cheese and spices to the skillet.
Gently mix everything together and then pat evenly into the skillet.
Add remaining cheese on top and bake for ten minutes. Top with fresh parsley, and let the casserole sit 5-10 minutes. Serve and enjoy!
