EASY MINI MEATLOAF MUFFINS WITHOUT BREADCRUMBS

1Everything but the ketchup for the topping goes into a mixing bowl. Combine well but don't overmix.
2Tear a small piece of bread off and add it to the bottom of the muffin pan to help control the fat. Then add 2 tbsp of beef mixture to the hole.
3Stir in a cornstarch lurry and let the sauce thicken up, by simmering it a few minutes.
4Once the meatloaf is cooked, remove one from the muffin tin and take off the bread.
5The parmesan cheese is used in place of breadcrumbs but it adds a nuttiness.
