For Chicken Rolls:

  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 1/2 cup grated cheese
  • 1/4 cup chopped fresh parsley

For Fresh Salad:

  • 2 cups mixed greens (lettuce, spinach, arugula)
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 1/2 red onion, thinly sliced
  • 1/4 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). This will ensure your chicken cooks evenly.
  2. Prepare the chicken: Flatten the chicken breasts to about 1/4 inch thickness using a meat mallet. This helps in even cooking and easy rolling.
  3. Season the chicken: Mix salt, pepper, garlic powder, and paprika. Sprinkle this mixture evenly on both sides of the chicken breasts.
  4. Add fillings: Sprinkle grated cheese and chopped parsley over one side of each chicken breast.
  5. Roll the chicken: Carefully roll up the chicken breasts and secure them with toothpicks.
  6. Cook the chicken: Heat olive oil in a pan over medium heat. Sear the chicken rolls until golden brown, then transfer them to a baking dish. Bake in the preheated oven for 20-25 minutes.
  7. Prepare the salad: Combine all salad ingredients in a large bowl. Toss with olive oil and balsamic vinegar, then season with salt and pepper.
  8. Serve: Once the chicken is cooked, let it rest for a few minutes. Remove the toothpicks, slice the rolls, and serve with the fresh salad on the side.
