Ingredients

  • 1 cup applesauce
  • 1 cup grated zucchini (drained)
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, mix the applesauce, grated zucchini, sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before slicing and serving.
