Inspired by Dr. Seuss’s beloved character, the Grinch, these cookies are sure to be a hit at any holiday gathering. Simple to make and delightful to eat, they are a fantastic way to get the kids involved in the kitchen during the holiday season.

Ingredients:

  • 1 box vanilla cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • Green food coloring (a few drops, depending on your preferred color intensity)
  • 1 cup powdered sugar
  • 1-2 tablespoons cornstarch
  • Heart-shaped sprinkles

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cake mix, vegetable oil, and eggs. Mix well until you have a consistent dough.
  3. Gradually add in the green food coloring while continuing to mix. Aim for a bright, Grinch-like green.
  4. Chill the dough in the refrigerator for about 10 minutes.
  5. In the meantime, mix the powdered sugar and cornstarch in a small bowl.
  6. Once chilled, take a spoonful of the dough and roll it into a ball. Then roll the ball in the powdered sugar and cornstarch mixture.
  7. Place the dough balls onto a lined baking sheet and flatten them slightly with the bottom of a glass.
  8. Add a heart-shaped sprinkle to each cookie.
  9. Bake for 8-10 minutes. Allow the cookies to cool on the baking sheet for another 5 minutes before transferring them to a cooling rack.
