Watergate Salad

You might remember this nostalgic dish from your childhood. It’s that pistachio-green dessert that your grandma used to bring to every potluck. Despite its name, Watergate Salad doesn’t have anything to do with the famous political scandal. It got its name simply because it was popular around the same time. With its vintage charm and incredibly easy preparation, this salad is ready to make a comeback in your kitchen.

Ingredients:

    • 1 box (3.4 oz) Pistachio instant pudding mix
    • 1 can (20 oz) Crushed Pineapple
    • 2 cups Mini Marshmallows
    • 1/2 cup Chopped Walnuts
    • 1/2 cup Shredded Coconut
    • 1 1/2 cups Cool Whip

Directions: 1. In a large bowl, mix the pudding mix and the entire can of crushed pineapple. 2. Add the mini marshmallows, chopped walnuts, and shredded coconut. Stir to combine. 3. Gently fold in the cool whip until it is incorporated. 4. Cover and refrigerate for at least 1 hour before serving, to allow the flavors to meld together.
