For the Chicken Fried Steak:

- 1/2 teaspoon salt
- 2 eggs
- 1/4 cup milk
- Vegetable oil for frying

- 2 tablespoons reserved frying oil
- 2 tablespoons all-purpose flour
- 2 cups milk
- Salt and pepper to taste
Instructions
- Begin by setting up your dredging station. In a shallow dish, combine the flour, paprika, garlic powder, onion powder, salt, and pepper. In another dish, whisk the eggs with 1/4 cup milk.
- Prepare each steak by first coating it in the seasoned flour mixture, then dipping it in the egg mixture, and finally, coating it again in the flour mixture for a double layer of crunch.
- Heat a generous amount of vegetable oil in a large skillet over medium-high heat. Once hot, fry the steaks until golden brown and crispy, about 4 minutes per side. Remove the steaks and keep them warm.
Notes
- After frying, reduce the heat to medium. Use 2 tablespoons of the frying oil, adding it back to the skillet.
- Stir in 2 tablespoons of flour, whisking until smooth to create a roux. Gradually pour in 2 cups of milk, scraping up any flavorful bits from the pan.
- Continue to cook and stir the gravy until it thickens. Season with salt and pepper to taste. Adjust the consistency with more milk if needed.
