Roasted Garlic Dip

Creamy Garlic Confit Spread

Ingredients:

  • 2 Whole Garlic Heads
  • 4 tablespoons Olive Oil
  • 1 tablespoon Fresh Lemon Juice
  • 1 teaspoon Salt
  • 1 tablespoon Fresh Chopped Chives
  • 1 tablespoon Fresh Chopped Parsley

Directions:

  1. Preheat oven to 400°F (200°C).
  2. Cut off the top of each garlic head. Drizzle with olive oil and wrap each one individually in foil.
  3. Roast for 40-45 minutes or until garlic is soft and golden.
  4. Allow the garlic to cool, then squeeze out the garlic cloves into a bowl.
  5. Mash the garlic cloves with a fork. Add lemon juice and salt. Mix until smooth.
  6. Stir in chopped chives and parsley.
