Ingredients:
- 2 cups vanilla wafer crumbs
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 cup whipped cream
- 20 oz crushed pineapple, drained
- 3.4 oz coconut cream instant pudding
- 2 cups milk
- 1 cup shredded coconut
- 1 cup whipped cream, for topping
- Maraschino cherries, for garnish
Directions:
- Combine vanilla wafer crumbs with melted butter and press into the bottom of a 9×13 baking dish. Refrigerate to set.
- In a mixing bowl, beat the cream cheese and powdered sugar until smooth. Fold in whipped cream.
- Spread the cream cheese mixture over the crust. Layer the drained pineapple over the cream cheese mixture.
- In a separate bowl, whisk together coconut cream pudding mix and milk. Let it sit for a few minutes until thickened, then spread over the pineapple layer.
- Sprinkle shredded coconut on top of the pudding layer.
- Spread an additional layer of whipped cream on top and garnish with maraschino cherries. Refrigerate for at least 4 hours before serving.
