Pina Colada Lush

Ingredients:

  • 2 cups vanilla wafer crumbs
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped cream
  • 20 oz crushed pineapple, drained
  • 3.4 oz coconut cream instant pudding
  • 2 cups milk
  • 1 cup shredded coconut
  • 1 cup whipped cream, for topping
  • Maraschino cherries, for garnish

Directions:

  1. Combine vanilla wafer crumbs with melted butter and press into the bottom of a 9×13 baking dish. Refrigerate to set.
  2. In a mixing bowl, beat the cream cheese and powdered sugar until smooth. Fold in whipped cream.
  3. Spread the cream cheese mixture over the crust. Layer the drained pineapple over the cream cheese mixture.
  4. In a separate bowl, whisk together coconut cream pudding mix and milk. Let it sit for a few minutes until thickened, then spread over the pineapple layer.
  5. Sprinkle shredded coconut on top of the pudding layer.
  6. Spread an additional layer of whipped cream on top and garnish with maraschino cherries. Refrigerate for at least 4 hours before serving.
