Ingredients:
- For the crust:
- 2 cups pretzels
- 1 cup melted butter
- 1/4 cup granulated sugar
- For the filling:
- 4 large eggs
- 2 cups granulated sugar
- 1/3 cup flour
- 1/2 cup fresh lime juice
- Zest of 2 limes
- 1/2 teaspoon salt
- For the topping:
- 1 cup powdered sugar
- Lime zest for garnish
Directions:
- Preheat oven to 350°F (175°C).
- In a food processor, pulse the pretzels until finely crushed. Add the melted butter and granulated sugar, and pulse until well combined.
- Press the pretzel mixture into the bottom of a greased 9×13-inch baking dish. Bake for 10 minutes.
- In a large bowl, whisk together the eggs, sugar, flour, lime juice, lime zest, and salt until smooth.
- Pour the lime mixture over the baked crust and return to the oven for 25 minutes, or until the filling is set and the edges are slightly golden.
- Allow to cool completely before sprinkling with powdered sugar and garnishing with lime zest. Cut into bars and serve.
