It’s time to bring the spirit of summer and your favorite cocktail to your kitchen! These Margarita Bars perfectly capture the essence of the classic drink, transforming it into a delectable dessert. Ingredients:

  • For the crust:
    • 2 cups pretzels
    • 1 cup melted butter
    • 1/4 cup granulated sugar
  • For the filling:
    • 4 large eggs
    • 2 cups granulated sugar
    • 1/3 cup flour
    • 1/2 cup fresh lime juice
    • Zest of 2 limes
    • 1/2 teaspoon salt
  • For the topping:
    • 1 cup powdered sugar
    • Lime zest for garnish

Directions:

  1. Preheat oven to 350°F (175°C).
  2. In a food processor, pulse the pretzels until finely crushed. Add the melted butter and granulated sugar, and pulse until well combined.
  3. Press the pretzel mixture into the bottom of a greased 9×13-inch baking dish. Bake for 10 minutes.
  4. In a large bowl, whisk together the eggs, sugar, flour, lime juice, lime zest, and salt until smooth.
  5. Pour the lime mixture over the baked crust and return to the oven for 25 minutes, or until the filling is set and the edges are slightly golden.
  6. Allow to cool completely before sprinkling with powdered sugar and garnishing with lime zest. Cut into bars and serve.
