Mediterranean Medley Tortellini Salad

Ingredients:

  • 16 ounces of cheese tortellini
  • 1 cup sliced black olives
  • 1 cup halved cherry tomatoes
  • 1 cup diced cucumber
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh basil
  • 1 cup Italian dressing
  • Salt and pepper to taste

Directions:

  1. Cook the tortellini according to the package instructions. Drain and let cool.
  2. In a large bowl, combine the olives, cherry tomatoes, cucumber, and red onion.
  3. Add the cooked and cooled tortellini to the bowl.
  4. Pour the Italian dressing over the salad and toss to combine.
  5. Add the chopped fresh basil and toss again.
  6. Season with salt and pepper to taste.
  7. Chill the salad in the refrigerator for at least an hour before serving to allow the flavors to meld.
