- 3 boneless, skinless chicken breasts
- 1 jar (24 oz) marinara sauce
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 12 lasagna noodles, uncooked
- 2 cups fresh spinach, chopped
- 1 egg
- 1/2 cup water
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Instructions
- In a medium bowl, mix together the ricotta cheese, egg, chopped spinach, 1 cup of mozzarella, 1/2 cup Parmesan, Italian seasoning, garlic powder, salt, and pepper.
- Spread a thin layer of marinara sauce on the bottom of the slow cooker.
- Break 3-4 lasagna noodles to fit, and layer them over the sauce.
- Place chicken breasts on top of the noodles.
- Spread a layer of the ricotta-spinach mixture over the chicken, followed by more marinara sauce.
- Repeat this process two more times, layering noodles, chicken, ricotta mixture, and marinara.
- Top with the remaining mozzarella and Parmesan cheese.
- Pour 1/2 cup water around the edges of the slow cooker to help the noodles cook evenly.
- Cover and cook on low for 4-5 hours, or until the chicken is cooked through and the noodles are tender.
- Shred the chicken with two forks, stir to combine, and serve hot.

As you layer the ingredients in the slow cooker, make sure the lasagna noodles are covered well with sauce and filling to ensure they cook thoroughly.
