Cowboy Pasta Salad

Ingredients:

  • 12 ounces pasta
  • 1 pound ground beef
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can corn, drained
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes with green chilis
  • 1 cup mayonnaise
  • 1 cup BBQ sauce
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup finely chopped onion

Directions:

  1. Cook the pasta according to package instructions, then drain and set aside to cool.
  2. While the pasta is cooking, brown the ground beef in a skillet over medium heat until fully cooked. Drain and set aside.
  3. In a large bowl, combine the cooked pasta, ground beef, bell peppers, corn, black beans, and diced tomatoes.
  4. In a separate bowl, mix together the mayonnaise and BBQ sauce until well combined.
  5. Pour the sauce over the pasta mixture and stir until all the ingredients are coated.
  6. Stir in the shredded cheddar cheese and chopped onion.
  7. Cover and refrigerate for at least an hour before serving to allow the flavors to meld together.
