Cabbage Roll Soup

The Cabbage Roll Soup is a quintessential comfort food with a twist. Imagine the flavors of a classic cabbage roll but in a much easier, less time-consuming format. Each spoonful is packed with ground beef, tender cabbage, and perfectly cooked rice, all swimming in a rich and savory broth that’s seasoned just right. It’s the kind of dish that warms you from the inside out, perfect for a chilly evening or when you’re just in need of a hearty and satisfying meal.

Ingredients:

  • 1 lb ground beef
  • 1/2 head of cabbage, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 4 cups beef broth
  • 1/2 cup uncooked white rice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • Fresh parsley, for garnish

Directions:

  1. In a large pot or Dutch oven, brown the ground beef over medium heat.
  2. Add the chopped onions and minced garlic, and sauté until onions are translucent.
  3. Add the chopped cabbage, diced tomatoes, beef broth, uncooked rice, salt, pepper, and Worcestershire sauce.
  4. Stir to combine and bring the mixture to a boil.
  5. Reduce the heat and let it simmer for about 25-30 minutes, or until the rice is fully cooked and the cabbage is tender.
  6. Garnish with fresh parsley before serving.
